Mini Eggplant Pizzas with Napoletana Sauce, Mozzarella and Toppings

These delicious mini eggplant pizzas are a fun and healthy twist on the classic pizza. With a base of tender roasted eggplant, topped with rich Agnesi Napoletana Sauce, melted mozzarella, and your choice of prosciutto cotto or olives, these pizzette are sure to be a hit with everyone!
Ingredients for 4 servings
- 400g of Sugo napoletana Agnesi
- 2 large eggplants, cut into 1.5 cm thick slices
- 200g mozzarella, grated or sliced
- 100g prosciutto cotto (ham), thinly sliced (optional)
- 50g black olives, pitted and sliced (optional)
- 2 tbsp olive oil
- to taste salt and black pepper
- for garnish fresh basil leaves
- Prepare the eggplant
Preheat your oven to 200°C (400°F). Lay the eggplant slices on a baking tray lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the preheated oven for about 20 minutes, or until the eggplant is tender and golden. - Heat the Napoletana sauce
While the eggplant slices are roasting, pour the Agnesi Napoletana Sauce into a saucepan and gently heat over medium-low heat. Stir occasionally and let it simmer for 5-7 minutes to intensify the flavours. - Assemble the pizzette
Once the eggplant slices are ready, remove them from the oven. Spoon a generous amount of Agnesi Napoletana Sauce onto each slice of eggplant. Top with a slice of mozzarella, and if desired, add prosciutto cotto on some and olives on others. - Bake the mini pizzas
Return the assembled eggplant pizzas to the oven and bake for another 5-7 minutes, or until the mozzarella has melted and is bubbly. - Garnish and serve
Remove the pizzette from the oven, and top with fresh basil leaves for a burst of colour and flavour. Serve hot as a tasty appetizer or a light meal.
