- Cook the pasta and carrots
Bring a large pot of salted water to a boil. Add the Pasta Agnesi Farfalle and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the carrot flowers to the pot to soften slightly. Drain, reserving ½ cup of pasta water. - Prepare the spinach sauce
While the pasta cooks, heat the olive oil in a pan over medium heat. Add the fresh spinach and cook for 2 minutes until wilted. - Blend the sauce
Transfer the spinach to a blender or use an immersion blender in the pan. Add the heavy cream and blend until smooth. Return to the pan and stir in the grated Parmesan, adjusting with salt and black pepper to taste. - Combine everything
