Ingredients for 4 servings

  • 320g of Cravattine 60 Agnesi
  • 200g Italian sausage, casing removed
  • 1 medium zucchini, diced
  • 1 Tropea onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 50ml dry white wine
  • 2 tbsp freshly grated Parmesan cheese
  • 50g toasted pine nuts
  • 40g grated Pecorino Romano
  • 1 clove garlic
  • 3 extra virgin olive oil
  • 1 tbsp water (if needed)
  • to taste salt and freshly ground black pepper

  1. Prepare the sausage pesto: In a food processor, blend the crumbled Italian sausage, garlic, and a few basil leaves until smooth. Add a spoonful of olive oil to achieve a creamy pesto consistency. Set aside.
  2. Cook the onions and zucchini: Heat the olive oil in a large pan over medium heat. Add the chopped Tropea onion and cook until softened, about 5 minutes. Stir in the sliced zucchini and cook for an additional 5–7 minutes, until tender. Season with salt and freshly ground black pepper.
  3. Cook the pasta: Boil the Agnesi Cravattine in a large pot of salted water until al dente. Reserve about 100ml of pasta water, then drain.
  4. Combine everything: Add the drained pasta to the pan with the onions and zucchini. Stir in the sausage pesto and mix well. If necessary, add a splash of reserved pasta water to create a silky sauce.
