Fettuccine with anchovies, herb bread and red pepper sauce

Ingredients for 3 servings

  • 250g of Fettuccine all'uovo Agnesi
  • 400g red peppers
  • 45g anchovies
  • 30g herb bread
  • 1 onion
  • Extra virgin olive oil as required
  • Salt and pepper to taste

  1. Cook the peppers and onion in a pan with a drizzle of oil for 10 minutes.
  2. Once cooked, blend, then filter the sauce with a sieve.
  3. Warm the anchovies in a pan with oil and sauté the pasta, cooked in boiling water for 7 minutes. Season with salt and pepper.
  4. Pour the sauce on to a plate and place the pasta on top of it. Sprinkle with crunchy herb bread.
