Ingredients for 4 servings

  • 320g of Spaghetti 3 Agnesi
  • 2 tbsp extra virgin olive oil
  • 1 courgette, sliced into thin rounds
  • 1 aubergine, diced
  • 1 red pepper, sliced into thin strips
  • 250g cherry tomatoes, halved
  • 1 garlic clove, minced
  • ½ tbsp dried oregano
  • ½ tbsp chilli flakes (optional)
  • to taste salt and black pepper
  • to garnish fresh basil leaves
  • 40g Parmigiano Reggiano, grated (optional)

  1. Cook the pasta
    Bring a large pot of salted water to a boil. Cook the Pasta Agnesi Spaghetti until al dente, following the package instructions. Reserve ½ cup of pasta water before draining.
  2. Sauté the vegetables
    In a large pan, heat the olive oil over medium heat. Add the garlic and cook until fragrant. Then, add the aubergine and red pepper, cooking for about 5 minutes until slightly softened. Stir in the courgette and cook for another 5 minutes.
  3. Add the tomatoes and seasonings
    Toss in the cherry tomatoes, dried oregano, chilli flakes (if using), salt, and black pepper. Cook for another 5 minutes until the tomatoes start to break down, creating a light sauce.
  4. Combine with pasta
    Add the drained Pasta Agnesi Spaghetti to the pan, tossing well to coat in the vegetable sauce. If needed, add a splash of reserved pasta water to enhance the texture.
  5. Serve and enjoy
    Divide onto plates, garnish with fresh basil, and sprinkle with grated Parmigiano Reggiano if desired. Serve immediately for a taste of the Mediterranean!
