Ingredients for 4 servings

  • 320g of Spaghetti 3 Agnesi
  • 200g chiodini mushrooms, cleaned and trimmed
  • 120g roasted chestnuts, roughly chopped
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 1 small shallot, finely chopped
  • ½ glass dry white wine
  • to taste salt and freshly ground black pepper
  • for garnish fresh parsley, chopped

  1. Sauté the mushrooms and chestnuts: Heat the olive oil in a large pan over medium heat. Add the chopped onion and garlic, cooking until softened. Stir in the sliced Chiodini mushrooms and chestnuts, cooking for about 5–7 minutes, until the mushrooms are tender. Season with salt and freshly ground black pepper.
  2. Add the stock: Pour in the vegetable or chicken stock, allowing it to simmer for a few minutes to blend the flavours.
  3. Cook the pasta: Boil the Agnesi Spaghetti in a large pot of salted water until al dente. Reserve about 100ml of pasta water, then drain.
  4. Combine everything: Add the drained spaghetti to the pan with the mushroom and chestnut mixture. Toss gently to coat, adding a splash of reserved pasta water to help create a silky sauce.
