  • 200g cherry tomatoes
  • 2 burrata balls (100g each)
  • 1 tbsp brown sugar
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste
  • 1 tsp liquorice powder
  • Fresh basil

  1. Prepare the confit tomatoes: Halve the cherry tomatoes and arrange them cut-side up on a baking tray lined with parchment. Season with salt, pepper, brown sugar, and balsamic vinegar. Bake at 130°C for about 1 hour, until wilted and caramelized.
  2. Cook the pasta: Boil the penne in salted water until al dente. Drain and toss with a drizzle of olive oil and the confit tomatoes.
  3. Serve: Divide the pasta onto plates, place a burrata in the center of each, sprinkle with liquorice powder, and garnish with fresh basil. Serve immediately.
