A creamy, comforting oven-baked pasta dish with sweet roasted pumpkin, rich Parmesan, and aromatic rosemary. Perfect for cosy dinners and a true taste of Italian tradition with a seasonal twist!
Ingredients for 4 servings
- 320g of Tortiglioni 46 Agnesi
- 400g pumpkin, peeled and diced
- 200ml whole milk
- 100ml single cream
- 80g Parmigiano Reggiano, grated (plus extra for topping)
- 1 garlic clove, minced
- 2 tbsp extra virgin olive oil
- 1 sprig fresh rosemary, finely chopped
- to taste salt and black pepper
- 30g breadcrumbs (for a crispy topping)
- Roast the pumpkin
Preheat the oven to 200°C (180°C fan). Toss the diced pumpkin with olive oil, minced garlic, salt, and black pepper. Spread on a baking tray and roast for 20 minutes until soft and slightly caramelised. - Cook the pasta
Meanwhile, bring a large pot of salted water to a boil. Cook the Pasta Agnesi Tortiglioni until very al dente (about 2 minutes less than the package instructions). Drain and set aside. - Prepare the pumpkin sauce
Transfer the roasted pumpkin to a blender with the milk, cream, and grated Parmigiano Reggiano. Blend until smooth and creamy. If too thick, add a splash of pasta water. - Assemble the dish
In a large bowl, mix the cooked Pasta Agnesi Tortiglioni with the pumpkin sauce and chopped rosemary. Pour into a greased baking dish and sprinkle with extra Parmigiano Reggiano and breadcrumbs for a crispy, golden topping. - Bake to perfection
Bake at 200°C (180°C fan) for 15-20 minutes until golden and bubbling. Let it rest for a few minutes before serving. - Serve and enjoy
