Ingredients for 4 servings

  • 320g of Fusilli 102 Agnesi
  • 250g ricotta cheese
  • 1 lemon zest and juice
  • 2 tbsp extra virgin olive oil
  • 50g pumpkin seeds
  • to taste salt and black pepper
  • optional, for garnish fresh parsley or basil, choppe

  1. Cook the pasta
    Bring a large pot of salted water to a boil. Cook the Pasta Agnesi Fusilli according to the package instructions, until al dente. Reserve 1 cup of pasta water, then drain the rest.
  2. Toast the pumpkin seeds
    While the pasta is cooking, heat a small pan over medium heat. Add the pumpkin seeds and toast them for 2-3 minutes, stirring often, until they are golden and crunchy. Set aside.
  3. Prepare the ricotta sauce
    In a large mixing bowl, combine the ricotta cheese, lemon zest, and lemon juice. Add a few tablespoons of olive oil to create a creamy, smooth texture. If the mixture is too thick, add some reserved pasta water, one tablespoon at a time, until you reach your desired consistency. Season with salt and pepper to taste.
  4. Combine pasta and sauce
    Once the Pasta Agnesi Fusilli is cooked and drained, add it to the ricotta mixture, tossing gently to coat the pasta evenly in the creamy sauce. If the sauce needs to be thinned out, add more pasta water, a little at a time.
  5. Garnish and serve
    Plate the fusilli and top with the toasted pumpkin seeds for a delightful crunch. Garnish with freshly chopped parsley or basil, if desired.
