Classic Lasagne with Rich Bolognese and Béchamel

Ingredients for 6 servings

  • 250g of Lasagne all'uovo Agnesi
  • 2 tbsp extra virgin olive oil
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 400g minced beef (or a mix of beef and pork)
  • 100ml dry white wine
  • 400g canned chopped tomatoes
  • 2 tbsp tomato purée
  • 250ml beef stock
  • 1 bay leaf
  • 50g unsalted butter
  • 50g plain flour
  • 500ml whole milk
  • a pinch nutmeg
  • 100g grated Parmesan cheese
  • to taste salt and black pepper

  1. Prepare the Bolognese sauce
    Heat the olive oil in a large pan over medium heat. Add the onion, carrot, and celery, and sauté for about 5 minutes until softened. Add the minced beef and cook until browned.
  2. Simmer the sauce
    Pour in the white wine and let it evaporate. Stir in the chopped tomatoes, tomato purée, beef stock, and bay leaf. Season with salt and pepper. Cover and let it simmer on low heat for 1.5 hours, stirring occasionally.
  3. Make the béchamel sauce
    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, whisking continuously. Gradually add the milk, whisking to avoid lumps. Cook until thickened, then season with salt, white pepper, and nutmeg.
  4. Assemble the lasagne
    Preheat the oven to 180°C (160°C fan). In a baking dish, spread a thin layer of Bolognese sauce, followed by a layer of Pasta Agnesi lasagne sheets. Add a layer of béchamel sauce and a sprinkle of Parmesan. Repeat the layers until all ingredients are used, finishing with béchamel and Parmesan on top.
  5. Bake and serve
    Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes until golden and bubbling. Let it rest for 10 minutes before serving.
