Linguine Agnesi with Artichokes & Sausage

A deliciously rich and hearty dish, this recipe combines tender artichokes, savoury sausage, and perfectly cooked Agnesi Linguine for a flavourful and satisfying meal. Simple to prepare, yet packed with taste, it’s ideal for any occasion.
Ingredients for 4 servings
- 320g of Linguine 10 Agnesi
- 3 artichokes, cleaned and sliced (or 200g jarred artichokes, drained and chopped)
- 250g Italian sausage, casing removed and crumbled
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 100ml white wine
- 2 tbsp olive oil
- to taste salt and black pepper
- for garnish Thyme, chopped
- 50g Parmesan cheese, grated (optional)
- Cook the sausage: Heat the olive oil in a large pan over medium heat. Add the crumbled sausage and cook until browned. Remove from the pan and set aside.
- Sauté the artichokes: In the same pan, add the onion and garlic, cooking until softened. Stir in the sliced artichokes and cook for a few minutes. Pour in the white wine and let it reduce.
- Cook the pasta: Boil the Agnesi Linguine in a large pot of salted water until al dente. Reserve about 100ml of pasta water, then drain.
- Combine everything: Return the sausage to the pan, then add the drained pasta. Toss well to coat, adding a splash of reserved pasta water if needed. Adjust seasoning with salt and black pepper.
