Linguine Agnesi with Artichokes & Sausage

Ingredients for 4 servings

  • 320g of Linguine 10 Agnesi
  • 3 artichokes, cleaned and sliced (or 200g jarred artichokes, drained and chopped)
  • 250g Italian sausage, casing removed and crumbled
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 100ml white wine
  • 2 tbsp olive oil
  • to taste salt and black pepper
  • for garnish Thyme, chopped
  • 50g Parmesan cheese, grated (optional)

  1. Cook the sausage: Heat the olive oil in a large pan over medium heat. Add the crumbled sausage and cook until browned. Remove from the pan and set aside.
  2. Sauté the artichokes: In the same pan, add the onion and garlic, cooking until softened. Stir in the sliced artichokes and cook for a few minutes. Pour in the white wine and let it reduce.
  3. Cook the pasta: Boil the Agnesi Linguine in a large pot of salted water until al dente. Reserve about 100ml of pasta water, then drain.
  4. Combine everything: Return the sausage to the pan, then add the drained pasta. Toss well to coat, adding a splash of reserved pasta water if needed. Adjust seasoning with salt and black pepper.
