Whole Wheat Spaghetti with Garlic, Chilli, Olive Oil and Seabass Tartare

A refined twist on a classic Italian dish, combining the bold flavours of garlic and chilli with the delicate freshness of seabass tartare. Made even better with wholesome Pasta Agnesi Whole Wheat Spaghetti.
Ingredients for 2 servings
- 200g of Spaghetti 3 integrali Agnesi
- 2 tbsp extra virgin olive oil
- 2 garlic cloves, finely sliced
- 1 small red chilli, finely chopped (or ½ tsp red chilli flakes)
- 150g fresh seabass fillet, finely diced
- 1 lemon zest
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil (for the tartare)
- for garnish fresh parsley, finely chopped
- to taste salt and black pepper
- Prepare the seabass tartare
In a bowl, mix the finely diced seabass with lemon zest, lemon juice, 1 tbsp of olive oil, salt, and black pepper. Cover and let it marinate in the fridge while you prepare the pasta. - Cook the pasta
Bring a large pot of salted water to the boil. Cook the Pasta Agnesi Whole Wheat Spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water before draining. - Prepare the garlic and chilli oil
In a large pan, heat 2 tbsp of extra virgin olive oil over low heat. Add the sliced garlic and chopped chilli, cooking gently until the garlic is golden and fragrant. Be careful not to burn it. - Toss the pasta
Add the drained spaghetti to the pan with the garlic and chilli oil. Toss well, adding a splash of reserved pasta water to coat the pasta evenly. Season with salt to taste. - Plate and serve
Divide the spaghetti between plates and top with spoonfuls of the seabass tartare. Garnish with fresh parsley and a drizzle of olive oil. Serve immediately.
