Ingredients for 4 servings

  • 320g of Spaghetti 3 Agnesi
  • 120g Pecorino Romano, finely grated
  • 1 lemon zest
  • ½ lemon juice
  • 10 fresh basil leaves, torn
  • 1 small red chilli (or ½ tsp dried chilli flakes), finely chopped
  • 2 tbsp extra virgin olive oil
  • to taste freshly ground black pepper
  • to taste salt

  1. Cook the pasta
    Bring a large pot of salted water to a boil. Cook the Pasta Agnesi Spaghetti until al dente, following the package instructions. Reserve ½ cup of pasta water before draining.
  2. Prepare the Pecorino cream
    In a bowl, mix the finely grated Pecorino Romano with the lemon zest and a pinch of black pepper. Gradually add a few tablespoons of hot pasta water while stirring until a smooth, creamy sauce forms.
  3. Sauté the chilli
    In a large pan, heat the olive oil over low heat. Add the chopped chilli and sauté for 1 minute until fragrant. Be careful not to burn it.
  4. Combine everything
    Add the drained Pasta Agnesi Spaghetti to the pan with the chilli oil and toss well. Remove from heat and quickly mix in the Pecorino cream, adding a splash of reserved pasta water if needed for a silky texture. Stir in the lemon juice and torn basil leaves.
  5. Serve and enjoy
    Divide onto plates and finish with extra Pecorino Romano, fresh basil, and a final drizzle of olive oil. Serve immediately and enjoy the perfect blend of creaminess, zest, and spice!
