Spaghettoni with Sausage Ragù

Ingredients for 4 servings

  • 320g of spaghettoni 4 Agnesi
  • 300g Italian sausage (mild or spicy), casings removed
  • 1 small onion, finely chopped
  • 1 carrot, finely diced
  • 1 celery stalk, finely diced
  • 2 garlic cloves, minced
  • 150ml dry white wine
  • 400g canned chopped tomatoes
  • 2 tbsp tomato purée
  • 2 tbsp extra virgin olive oil
  • to taste salt and black pepper
  • 6 fresh sage leaves, finely chopped (for garnish)
  • optional, for serving Freshly grated Pecorino Romano

  1. Sauté the aromatics
    Heat the olive oil in a large pan over medium heat. Add the onion, carrot, celery, and garlic. Sauté for about 5 minutes until softened and fragrant.
  2. Cook the sausage
    Add the crumbled sausage to the pan and cook for 8–10 minutes, stirring occasionally, until golden brown. Use a wooden spoon to break it into small pieces.
  3. Deglaze with wine
    Pour in the white wine and let it simmer until mostly evaporated, about 3 minutes, enhancing the depth of flavour.
  4. Simmer the ragù
    Stir in the chopped tomatoes and tomato purée. Season with salt and black pepper. Reduce the heat to low and let the sauce simmer gently for 25–30 minutes, stirring occasionally.
  5. Cook the pasta
    Meanwhile, bring a large pot of salted water to a boil. Cook the Pasta Agnesi Spaghettoni until al dente, following the package instructions. Reserve ½ cup of pasta water before draining.
  6. Combine and serve
    Toss the drained Pasta Agnesi Spaghettoni into the pan with the ragù, mixing well. Add a splash of reserved pasta water if needed for a silky texture. Sprinkle with freshly chopped sage for a fragrant finishing touch. Serve immediately with freshly grated Pecorino Romano for extra richness.
