Creamy Tagliatelle with Mushrooms

Ingredients for 4 servings

  • 320g of Tagliatelle all'uovo Agnesi
  • 2 tbsp extra virgin olive oil
  • 1 small shallot, finely chopped
  • 1 garlic clove, minced
  • 300g mixed mushrooms (porcini, cremini, or button), sliced
  • 150ml double cream
  • 50ml white wine (optional)
  • 40g Parmigiano Reggiano, grated
  • for garnish fresh parsley, finely chopped
  • to taste salt and black pepper

  1. Cook the pasta
    Bring a large pot of salted water to the boil. Cook the Pasta Agnesi Tagliatelle according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Sauté the mushrooms
    In a large pan, heat the olive oil over medium heat. Add the chopped shallot and garlic, cooking until soft and fragrant. Stir in the mushrooms and cook for about 5-7 minutes until golden brown.
  3. Deglaze and add cream
    If using, pour in the white wine and let it reduce for a couple of minutes. Then, lower the heat and stir in the double cream, seasoning with salt and black pepper. Simmer for a few minutes until the sauce thickens.
  4. Combine with pasta
    Add the drained Pasta Agnesi Tagliatelle to the pan, tossing well to coat in the creamy mushroom sauce. If needed, add a splash of reserved pasta water for the perfect consistency.
  5. Serve and enjoy
    Divide the pasta between plates, sprinkle with grated Parmigiano Reggiano, and garnish with fresh parsley. Serve immediately for a truly indulgent experience.
