Ingredients for 4 servings
- 320g of Tortiglioni 46 Agnesi
- for boiling water salt
- 2 tbsp extra virgin olive oil
- 2 yellow bell peppers, deseeded and chopped
- 1 small shallot, finely chopped
- 1 tbsp capers, rinsed and drained
- 100ml vegetable broth
- 50ml heavy cream
- to taste black pepper
- to garnish fresh marjoram leaves
- Cook the pasta Bring a large pot of salted water to a boil. Cook the Pasta Agnesi Tortiglioni according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
- Prepare the yellow pepper cream In a pan, heat 1 tbsp olive oil over medium heat. Add the shallot and sauté for 2 minutes until soft. Add the yellow peppers and cook for 5 minutes. Pour in the vegetable broth, cover, and let simmer for 10 minutes until the peppers are tender.
- Blend the sauce Transfer the cooked peppers and broth to a blender. Add the heavy cream, a pinch of salt, and black pepper. Blend until smooth and creamy.
- Combine with the pasta Return the sauce to the pan over low heat. Add the drained Pasta Agnesi Tortiglioni and toss to coat. If needed, add a splash of reserved pasta water for a silky texture.
- Serve and garnish Plate the pasta and sprinkle with capers for a briny contrast. Garnish with fresh marjoram leaves and drizzle with the remaining olive oil. Serve immediately.
