  • 1 medium zucchini
  • 150g red shrimp (raw, sushi-grade)
  • 1 organic lime (juice and zest)

  • 20g unsalted shelled pistachios
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • Lemon thyme or lemongrass, to taste
